KULFA VEGETABLE (PARSLANE)

Ingredients:----

Kulfa - 1 bunch,
Gram dal - 1 cup,
Green Chilli- 1 (chopped),
Onion - 1 (chopped),
Tomatoes - 2 (chopped into small pieces),
Ginger - 1/2" (finely chopped),
Salt to taste,
Red chilli powder - 1 tsp,
Turmeric powder - 1/2 tsp,
Ghee or oil - 1 tbsp (it tastes good if cooked in ghee),

Method

1. Soak chana dal for one hour.
2. Wash kulfa properly. Discard only the roots and retain the stem. Chop kulfa leaves finely along with the stem.
3. In a pressure cooker, add chana dal, kulfa leaves, salt, turmeric powder along with 1 cup water.
4. Cook till done.
5. Now take ghee in a kadhai and add onion, saute (don't let them brown).
6. Now add tomatoes, ginger, green chilli and red chilli powder and saute for 1-2 minutes till ghee separates.
7. Now add dal and kulfa leaves mixture to it.
8. Mix gently and simmer for a few minutes.
9. Serve hot.
