VEGETABLE POHA












Ingredients:---
Poha (Rice flakes) - cups,
Onions - 1 (chopped),
Potatoes - 1 (chopped in small cubes),
Carrot - 1 (chopped),
Peas - 1/2 cup,
Mustard seeds - 1 tsp,
Curry leaves - A few,
Roasted Peanuts - 2 tbsp,
Turmeric Powder - 1/2 tsp
Red chilli Powder - 1/2 tsp
Salt to taste
Lemon Juice - 1 tsp
Oil - 2 tbsp
Handful of cashew nuts and raisins (optional)

Method


1. Put the poha in a sieve and wash under running water for 2-3 minutes keep aside to drain for 10 minutes.
2. Heat the oil in a pan, when hot and mustard seeds and curry leaves.
3. Add onions, potatoes, peas and carrot and cover with a lid. When the vegetables are tender add turmeric powder, salt and red chilli powder drained.
5. Add poha and cook for a minute.
6. Turn off the fire Add lemon juice peanuts and cashews and raisins.
7. Serve hot with tomato ketchup and bhujia.
