ALU PYAJ KI SABJI

Ingredients:---

Potatoes - 4 (cut into big cubes),
Shallots (small onions) - 6 (peel them but remain the top intact),
Green chillies - 2 (Slit length wise, deseed them),
Onions - 3 (make a paste),
Tomatoes - 3 tsp,
Garlic - 1 tsp,
Ginger - 1 tsp,
Turmeric powder - 1/4 tsp,
Chilli powder - 1 1/2 tsp,
Cumin Powder - 1/2 tsp,
Coriander powder - 1/2 tsp,
Salt to taste,
Fresh coriander leaves (chopped) - 1 tbsp,
Ginger (cut into thin strips) - 1 inch piece,
Oil - 2 tbsp (for frying),
Bay leaf - 1,
Cardamoms - 2,
Black peppers - 5-6,
Cloves - 2-3,
Cinnamon - 1 small piece,
Cumin seeds - 1 tsp,

Method

1. Heat enough oil in a kadhai for frying.
2. Fry potatoes on low flame (don't let them brown).
3. Fry whole onions and slit green chillies.
4. Keep aside.
5. Hat oil in another kadhai. Add bay leaf, cumin seeds, cardamon, black pepper, cloves and cinnamon.
6. Heat onion paste and fry till golden brown add ginger-garlic paste and fry for another 1 minute.
7. Add tomato puree. Cook till oil separates. Add turmeric powder, red chilli powder and salt.
8. Add fried potatoes, onions and green chillies.
9. Add 1 cup water and bring to a boil.
10. Cook till potatoes are done and gravy is thick.
11. Serve hot with garnished coriander leaves and ginger strips.
