KATHAL KI SABJI (JACKFRUIT)

Ingredients:---

Kathal - 500 gms,
Onions - 4 (thinly slices),
Tomatoes - 3 (pureed),
Ginger - 1 tsp (chopped),
Garlic - 1 tbsp (chopped),
Green chillies - 2 (cut in length wise),
Cumin seeds - 1 tsp,
Asafoetida powder - 1 pinch,
Turmeric powder - 1/2 tsp,
Chilli powder - 1 tsp,
Salt ot taste,
Garam masala - 1 tsp,
Amchur - 1/4 tsp,
Chopped coriander leaves - 1 tbsp,
Oil for frying,

Method

1. Heat oil in a wok. Fry kathal till brown.
2. Heat 1 tbsp oil in another wok. Add cumin seeds when they start to crackle add hing (asafoetida) and onions.
3. Saute till golden brown.
4. Put ginger garlic and slit green chillies.
5. When oil separates, add pureed tomato.
6. when oil leaves the sides of the wok, add all the masalas mixed with 1 tbsp water.
7. Stir till oil comes out of the masala.
8. Add kathal with 1 cup water.
9. Simmer till dry and masala coats the kathal properly.
10. Serve hot garnished with coriander leaves.
