PASTA IN RED SAUCE

Ingredients:---

Tomatoes - 300 gms (blanched),
Onion - 1 (chopped),
Capsicum - 1 (chopped),
Green chillies - 4 (chopped),
Tomato sauce - 3 tbsp,
Vinegar - 1 tbsp,
Sugar - 1 tbsp,
Salt to taste,
Spring onions - 2 tbsp (finely chopped),
Garlic - 8-10 cloves,
Butter - 1 tbsp,

Method

To Prepare salsa
1. Blend together the tomatoes onions, capsicum and green chillies in a mixer till smooth (Pureed).
2. Heat the butter in a pan. Add spring onions and garlic.
3. Cook for 2 minutes, add the pureed vegetables, sugar and salt and simmer for 5 minutes.
4. Remove from heat. Add tomato sauce and vinegar. Salsa is ready. Keep aside.

For Pasta

Ingredients:---

French beans - 1 tbsp (chopped),
Broccoli - 1/2 cup (chopped),
Baby corn - 1 tbsp (chopped),
Butter - 1 tbsp,
Red, yellow and green bell peppers - 1/2 cup (sliced),
Oregano - 1 tsp,
Grated cheese - 1 tbsp,
White pepper and salt,

Method

1. In a pan, heat the butter and mix french beans. Cook for 4-5 minutes.
2. Add broccoli and cook for another 2 minutes.
3. Add the bell peppers, pasta, baby corn, cheese, salt and white pepper. Cover and cook for 5 minutes.
4. Spread the vegetables in the dish, sprinkle oregano and pour the hot salsa over the vegetables.
5. Serve hot with garlic bread.
