VEGETABLE VERMICELLI UPMA













Ingredients:----

Vermicelli - 2 cups,
Potato- 1 medium sized,
Carrot- 1 medium sized,
French beans- 5 to 6,
cauliflower 5 to 6 florets,
Capsicum - 1 medium sized,
Green peas- 1/4 cup,
Ginger- 1 inch piece,
Onion- 1 medium sized,
Green chillies-2,
Curry leaves- 6 to 8,
Oil- 4 tbsp
Mustard seeds- 1/2 tsp
Black gram split (dhuli urad dal)- 2 tsp
Turmeric powder- 1/4 tsp
Salt to taste,
Lemon juice- 2 tbsps


Method

1. Peel, wash and cut potato and carrot into one-centimeter cubes. String, wash and cut French beans into one-centimeter pieces. Wash cauliflower florets. Wash, halve, deseed and cut capsicum into one-centimeter cubes. Wash green peas.
2. Peel, wash and finely chop ginger and onion. Remove stems, wash and slit green chillies. Wash curry leaves and pat them dry.
3. Boil potato, carrot and cauliflower in two cups of water till nearly done. Add french beans and peas and boil further for five minutes. Drain and cool.
4. Heat five cups of water, bring it to a boil, add vermicelli, salt and two tablespoons of oil. Cook for one minute or till slightly underdone. Drain, refresh under cold water and keep aside.
5. Heat remaining oil in a pan, temper with mustard seeds and curry leaves. Add dhuli urad dal, ginger and onion. Saute well till the onion turns light brown.
6. Add green chillies and stir. Add the cooked vegetables, capsicum, turmeric powder and saute for four to five minutes.
7. Add cooked vermicelli, salt and stir gently. Cook for five to six minute.
8. Remove from heat. Mix in lemon juice and serve hot.
