MIX FRUIT SMOOTHIE

Ingredients:---

Mix fruit smoothie
Peaches - 2 (chopped),
Banana - 1 (sliced),
Tinned Pineapple - 1/2 cup,
Mango - 1/2 cup (chopped),
Low fat milk - 1 cup,

Method

1. Place all the ingredients into a blender. Whiz till smooth.
2. Serve chilled.

MANGO SMOOTHI

Ingredients:---

Mango - 1 cup (diced),
Apple/banana - 1/2 (diced),
Curd - 1 cup,
Milk - 1/2 cup (optional),
Honey - 1 tsp,
Crushed ice,

Method

1. Put mango, apple/banana into a blender with curd, milk, honey and crushed ice. Whiz for 30 seconds until really smooth.
2. Refrigerate and serve chilled.

APRICOT AND BANANA SMOOTHIE

Ingredients:---
Dried apricots - 4 (chopped),
Banana - 1 (chopped),
Low fat yogurt - 1 cup,
Crushed ice,

Method

1. Add the apricots, banana yogurt and crushed ice in a blender and whiz till smooth.
2. Serve chilled.

APRICOT SMOOTHIE

Ingredients:---

Apricots (dried) - 5,
Orange juice - 1 cup,
Milk - 1/2 cup,
Honey - 1 tbsp,
Crushed ice,

Method

1. Roughly chop the apricots add all the ingredients to a blender and whiz till smooth.
2. Serve chilled.

MANGO FROOTI

Ingredients:---

Mango - 4 (cut into cubes),
Raw mango - 1 (cut into cubes),
Sugar - 2 cups,
Water - 1 glass,

Method

1. Boil mangoes, raw mango, sugar and water till 1 whistle. Slow the fire and keep on gas for 10 minutes. Shut off the gas.
2. Cook the mixture.
3. Blend in a blender and strain.
4. Put crushed ice and serve chilled.

ROSE MARY DRINK

Ingredients:---

Strawberry crush - 4 tbsp,
Orange juice - 1 cup,
Pineapple - 1/2 cup (chopped tinned or fresh),
Vanilla ice-cream - 1 scoop,
Crushed ice,

Method

1. Mix all the ingredients in a blender till smooth.
2. Strain. Add crushed ice and serve chilled.
(In the absence of pineapple you can use banana, apple or any fruit of your choice.),

MANGO CURD

Ingredients:---

Plain curd - 3 cups,
Sugar - 1 tbsp,
Mango pulp - 1 cup,
Cardamom powder - 1/2 tsp,
Mango essence - 1 drop,

Method

1. Hang curd in a muslin cloth for 15 mins to drain extra water.
2. Beat well and add sugar, cardamom powder mango essences, mango pulp. Mix well.
3. Keep in refrigerator and serve chilled.

MANGO SHAKE

Ingredients:---

Mango - 1 (fully riped),
Chilled milk - 1 1/2 glasses,
Sugar - 1 1/2 tbsp,
Crushed ice,

Method

1. Cut the mango into pieces discarding the seed.
2. In a mixer, put mango pieces, sugar and little milk, churn till smooth.
3. Add remaining milk and crushed ice. Churn again.
4. Serve chilled.

AAM RAS

Ingredients:---

Mangoes - 2 (fully riped),
Sugar - 1/2 cup,
Cardamom powder - 1 tsp,
Crushed ice,
Almonds - 1 tbsp (crushed),
Method
1. Peel off the mangoes. Cut into pieces discarding the seeds.
2. Put the mango pieces in a mixer, add sugar, cardamom powder and crushed ice. Blend till smooth.
3. Take out the Aam Ras in individual bowls and garnish with crushed almonds.

FALSA SHARBAT

Ingredients:---

Falsa - 250 gms,
Sugar - 100 gms,
Black salt to taste,
Salt to taste,
Water - 2 glasses,
Crushed ice,

Method

1. Wash falsa properly. Put in blender for 1/2 minute only.
2. Pass through a sieve, discard the seeds.
3. Mix in sugar, salt and black salt.
4. Add crushed ice and serve chilled.
Note: You can use soda water in place of water. In that case, blend the falsas with little water. Add sugar, salt and black salt and pour with soda water and crushed ice.

BANANA SHAKE

Ingredients:---

Banana - 2 (fully riped),
Milk - 1 1/2 glass,
Sugar - 3 tbsp,
Crushed ice,
Vanilla essence - 2 drops,

Method

1. In a blender, combine banana (cut into slices) 1/2 cup milk and sugar. Blend well.
2. Add remaining milk, vanilla essence and crushed ice and blend again till smooth.
3. Serve chilled.

MASALA SODA

Ingredients:---

Jaljeera Powder - 1 tsp,
Sugar syrup - 4 tsp,
Lemon juice - 4 tsp,
Black salt - 1/2 tsp,
Chilled soda - 1 bottle (800 ml),
Crushed ice.

Method

1. In a jug, mix lemon juice, sugar syrup, jaljeera powder and black salt.
2. Pour it into individual glasses.
3. Add soda at the last moment.
4. Put crushed ice and serve chilled.

KESAR-BADAM MILK (HOT)

Ingredients:---

Milk - 2 cups,
Badam - 8-10 (soaked and ground to coarse paste),
Kesar (saffron) - a few strands (soaked in milk),
Cardamom powder - 1 tsp,
Sugar as per taste,
Pistachio cutting for decoration,

Method

1. Boil milk in a pan. Add badam paste, kesar, cardamom powder and sugar.
2. Simmer for a few minutes.
3. Serve in earthen glasses top with pistachio cutting.

CRISPY CHILLI CORN

Ingredients:---

Corn kernels - 2 cups,
Ginger-garlic paste - 1 tsp,
Corn flour - to dust,
Maida - 1 tbsp,
Onion - 1 tbsp (chopped finely),
Green chilli - 1 (chopped finely),
Red chilli powder - 1/2 tsp,
Salt to taste,
Chaat masala - 1 tsp,
Oil for frying,

Method

1. Mix corn kernels, salt, ginger-garlic paste, maida and corn-flour such that the corn kernels are well coated with this mixture.
2. Heat oil in a kadhai and deep fry the corn over high-heat until golden brown. Drain on absorbent paper.
3. In another pan, heat a little oil add onions and green chilli. Saute a little. Add fried corns. Toss it and add salt, red chilli powder and chaat masala. Mix gently and serve hot immediately.

PAPAYA SHAKE

Ingredients:---

Papaya pieces - 1 cup,
Milk - 2 cups,
Vanilla ice-cream - 1 scoop,
Candid cherries - 1 tsp,
Rose essence - 2 drops,
Crushed ice,

Method

1. Peel out the papaya and cut into pieces.
2. Put the papaya pieces to the mixer, add milk, vanilla ice-cream, rose essence and crushed ice. Grind.
3. Transfer it to a glass and top with candid cherries.
Note: You can use rose-cream in place of vanilla ice-cream. In that case don't add rose-essence.

WATERMELON JUICE

Ingredients:---

Watermelon - 2 cups (chopped and deseeded),
Sugar - 1 tsp (optional),
Black salt - 1/2 tsp,
Pepper - 1/2 tsp,
Lemon juice - 1 tsp,
Ice-cubes - 3-4,

Method

1. In a mixer jar, add deseeded watermelon pieces, sugar, pepper powder and salt.
2. Grind until you see a nicely blended liquid. (filter it if you want).
3. Transfer to a glass and add lemon juice. Mix and top with ice-cube.
4. Serve chilled.
Note: Wonderful juice for summer!!!!!!

AAM PANNA (RAW MANGO DRINK )

Ingredients:---

Raw mango - 1/2 kg,
Sugar - 1 cup,
Mint leaves - 1/2 cup (chopped),
Roasted cumin powder - 2 tsp,
Black salt - 1 tsp,
Salt - 1 tsp,
Mint sprig for garnishing,

Method

1. Peel the raw mangoes.
2. Pressure cook them in a pressure cooker with 6 cups water till 2-3 whistles.
3. Remove from heat and cool.
4. Extract the pulp by rubbing them with hands. Discard the seeds.
5. Mix the pulp and water with blender. Strain the mixture.
6. Make a paste of mint leaves with little water.
7. Add mint paste, cumin powder, sugar, black salt and salt. Mix well.
8. Check and adjust the seasoning.
9. Chill till serving time. Pour the panna over ice and garnish with a mint sprig.

MOC BEER

Ingredients:---

Sugar syrup - 1 tbsp,
Lemon juice - 1 tsp,
Coffee - 1 tsp,
Bhuna jeera (roasted cumin seeds powder) - 1/2 tsp,
Salt to taste(optional),
Soda water - 100 ml,
Crushed ice,

Method

1. In a glass, add sugar syrup, lemon juice, coffee, salt, lemon, jeera and soda water. Mix well.
2. Add crushed ice and serve chilled.

THANDAI

Ingredients:---

Milk - 1 lt. (full cream),
Sugar - 1/2 cup,
Black Peppercorns - 10,
Saffron - a few strands,
Cashewnuts - 1/2 cup(soaked),
Almonds - 1/2 cup (blanched and peeled),
Pistachios - 1/2 cup (blanched and peeled),
Melon seeds - 2 tbsp,
Poppy seeds - 2 tbsp (soaked),
Green cardamoms - 8,
Fennel seeds - 2 tbsp,
Rose Water - 1/2 tsp,

Method

1. Grind together almonds, cashewnuts, pistachios, melon seeds and poppy seeds with a little milk to a fine paste.
2. Boil the milk and add this paste to it.
3. Add saffron and sugar to it and boil till the sugar disolves.
4. Grind fennel seeds, green cardamom and peppercorn to a fine powder.
5. Add this powder to the milk and simmer for 3-4 minutes.
6. Strain the mixture and serve chilled.

CINDERELLA

Ingredients:---

Lemon juice - 1 tsp,
Orange juice - 1 tsp,
Pineapple juice - 1 tsp,
Ginger ale - 1/2 tsp,
Sugar syrup - 1/2 tsp,

Soda - 100 ml,
Method
1. Pour lemon juice, orange juice, pineapple juice, ginger ale and sugar syrup in a cocktail shaker.
2. Shake well.
3. Strain into an ice filled highball glass and add soda.
4. Serve chilled.
